I couple of days ago I was looking for something to read among the books in my small library. Unfortunately, I was limited to a number of MBA text books I kept after graduating and my daughter’s Psychology text books. Boring. I know. But, somehow I felt like holding a book in my hands and not the Nook, so I had to make my limited choice… Thus, I ended my selection on WHY SMART PEOPLE CAN BE SO STUPID. I guess that was something my child had to read for one of her psychology classes. … (a poor thing..)
Well, interesting enough, I started to see a connection between the theories discussed in the book and the behavior that puts us in troubles with our eating and exercising habits. I am talking about the beliefs that make the smart people make wrong choices. Look at former president Clinton, for example. He is a smart man. But, how dumb was it to get involved with the intern? He was in denial and believed into an imaginary world around him (related to Monica), totally disregarding the facts.
Often we fall into a trap of theories and marketing bullying techniques (once again, sorry my marketing crew) without giving the common sense a chance:
- Stop. Think. Evaluate “as is”. Go back to your roots. Trust the Nature. I have been there. So I am speaking for myself here. But, I am suspecting lots of you are still “there”…
This is what I mean by “there”:
1. You were told to eat lots of protein (meats, cheeses)
2. You were told to eat lots of calcium and good bacteria (dairy)
3. You were told to “hydrate” ( drink 8 glasses of water)
4. You were told to burn calories (work out at least 1 hour a day)
5. You were told to eat lots of fiber
6. You were told to eat whole wheat
I can go on. .. I did all of it. Not a single thing worked well for me. Nothing gave me the life style that I could sustain. Nothing on that list gave me the energy and health.
Well, somehow I got what I was looking for. So, how did I do that?

Today, I am unfolding the third one:
Dairy Free!
I can see your reaction: Why not? We were told it is good for us! How about the calcium? Vitamin D?
I stopped eating it. It will be only an occasional bite of cheese, or a very small splash of Goat Milk in my Almond Latte. I feel much better. No belly bloating anymore!
You may not know you have side effect from eating dairy products. But, many of us can blame dairy for excessive weight, acne, mucus build-up, bad digestion, and allergies. Something stuck in my memory since I was a young girl: one of the doctors told me that people should stop eating dairy after they turn 3-4 years of age.
Dairy is not easily digested. Most of the world is lactose intolerant, due to the fact that we lose the ability to completely digest lactose by the age of four. As a result, many milk drinkers develop diarrhea, gas, stomach cramps, bowel inflammation and toxicity. Antibiotics are common in milk, due to cows’ udders becoming infected. These same antibiotics are transmitted to humans. (Trust me on that. I was around dairy farm enough to know exactly what is going on.)
Here is the main reason why I gave up dairy:
Casein, a milk protein, is a common cause of food allergies. Casein needs the enzyme rennin, to break down, but rennin isn’t present in humans after the age of four. Casein is very sticky and coats the digestive system, leading to leaky gut syndrome, mal-absorption and/or constipation.
You will ask: How about the calcium??? Here is how:
Most fruits, vegetables and nuts are excellent sources of calcium. It is extremely doubtful that we can utilize any of the calcium in milk. The calcium in milk is bound to its protein complement, casein. Without the key enzyme, rennin, neither casein nor calcium can be digested.
I promised to keep my letters short, so I have to move on to the next best recipe. But, use your common sense. Stop. Think. Learn. Make good choices! hopefully dairy free choices. (Considering the size and the power of the dairy industry, I suspect that you will never hear the truth through the main media or major medical channels....)
Dairy Free Ice Cream desert:
You can make this as ice cream or you can serve it in a raw tart as I did. Either way you will love it!
Tart:
5 dry plums
5 dates (pitted)
½ cup of walnuts
½ cup of almonds
Direction:
Blend ingredients in the blender until “manageable” consistency. Press the “dough” into the small serving cups. You are done.
Filling (or Ice Cream)
2 ripe frozen bananas
1 ripe banana
½ cup of shredded dry coconut meat
2 tbsp of Chia Seeds (you can buy it here)
Directions: Always buy extra bananas and leave them on the table until you see small brown spots. That means they are ripe! Peel, slice and freeze in the sandwich bags (2-3 bananas per bag).
Blend 2 frozen bananas with the one ripe fresh banana. (Whip until it looks like ice cream. ) Now: add shredded coconut and give it a short spin in your blender. You are done. Serve inside of the tart and dress it up with the “toppings”
Toppings
Make your choice: blueberries, raspberries, chunks of mango or pineapple… Whatever you like.
